    2 tsp olive oil
    1 onion, chopped
    2 cloves garlic, minced
    1 large carrot, minced
    1 ½ pounds lean ground turkey breast
    3 slices (2 oz total) firm-textured white sandwich bread, crumbled ¼ c. low fat (1%) milk
    1 egg
    1 tsp dried sage
    ¾ tsp each salt and pepper
    ½ c ketchup
      1) Preheat the oven to 350 deg F. Spray a 5x8 ½ x3-inch loaf pan with nonstick cooking spray.
      2) In a large nonstick skillet, heat the oil over moderate heat. Add the onion and garlic, and cook, stirring, for 5 min or until the onion is softened. Add the carrot and cook, stirring, for 4 min or until the carrot is crisp-tender. Set aside to cool slightly.
      3) In a large bowl, combine the bread and milk. Add the ground turkey, the sautéed vegetable mixture, the egg, ¾ tsp of the sage, ½ tsp of the salt, and all of the pepper, and mix well. Transfer the meat loaf mixture to the prepared pan.
      4) In a small bowl, combine the ketchup with the remaining ¼ tsp each sage and salt. Spread the ketchup mixture evenly over the top of the meat loaf and bake for 45 min or until cooked through and firm. Serves 6.
